Leaf beet, also known as Swiss chard or colored chard, is a leafy vegetable rich in nutrients. It belongs to the Amaranthaceae family and is closely related to red beet; however, it is cultivated for its leaves and stems rather than for its root. Botanical Description Leaf beet is a biennial herbaceous plant, often grown as an annual crop. It is characterized by broad, glossy green leaves and thick stalks that vary in color, including red, yellow, orange, and white, giving the plant a distinctive ornamental appearance. The leaves grow in a basal rosette, and the plant may reach a height of 40–60 cm. Nutritional Value Swiss chard is considered a highly nutritious vegetable, as it contains: Vitamins: A, C, and K Minerals: Iron, calcium, magnesium, and potassium Dietary fiber that aids digestion Antioxidant compounds such as betalains and flavonoids These components make it an important food for supporting immunity and promoting bone and blood health. Uses Swiss chard is widely used in cooking, as its leaves and stems are included in: Fresh salads Cooked dishes such as soups and stews Stuffings and pastries It is also sometimes used as an ornamental plant due to the attractive colors of its stalks.
